Pork caul fat—also called lace fat or crépine—is a delicate, lacy membrane of fat traditionally used as an edible wrap for meat. Prized by cooks for making crépinettes, meatballs, pâtés, sausage, stuffed roasts, and lean cuts especially tender and flavorful, caul fat gently renders as it cooks, basting what it surrounds and helping it hold its shape while creating a rich, beautiful finish.
If desired, soak in lightly salted water briefly to clean it and reduce any lingering aroma, then pat dry.
Simply rinse, cut to size, wrap loosely around your filling, and sear seam-side down for a classic, chef-worthy preparation.

Our pigs roam and forage bugs, grass and roots in addition to our carefully selected, corn-free and soy-free ration. This enhances the nutrient profile of the meat.
Plainly said: When you eat this pork, you're not just consuming delicious protein. You are supporting your body with micronutrients like Vitamin K2, Vitamin E, Vitamin D, Omega-3s and Selenium.
But don't forget the macronutrients! Since our pigs don't have access to corn and soy, this pork has a healthier fat profile rich in beneficial saturated fats while being lower in unstable unsaturated fats. Low PUFA pork like ours is found to be lower in phytoestrogens and pesticides—so you can enjoy a delicious, nourishing cut of pork without concerns about harmful endocrine disruptors.
The American diet is so deficient in what our bodies need to be strong, healthy and whole. That's why farmers like us grow food the way we do. We want you to feel the best you can while living, loving and working alongside those you care about.
It's not just pork.
It's peace of mind and body.
